WHAT IS THE FUTURE OF COFFEE:
Magnolia is my love letter to espresso. It delights in those surprisingly fruity shots with bright and sparkling acidity. It always seeks out sweetness paired with stunning clarity and vibrancy. It is all the best aspects of modern espresso and works to remind me that the possibilities for a good cup are endless when forever seek coffees that are in bloom.
Nano Genji is back! We last brought in this wonderful Agaro offering on the launch menu two years ago. It is the sibling mill to the aptly revered Nano Challa. The station opened three years ago, complete with brand new Penagos, dozens of drying beds, and opportunities for new producers to join, which is great given the areas robust production. As of this harvest, there is just over 630 members between the two stations. As a Jimma Zone coffee, this comes by way of the larger Kata Muduga Cooperative Union and Aleco at Red Fox Merchants.
Nano Genji is amazingly lively and intensely sweet. The cup opens with the luxurious and rich juiciness of a minneola orange. The citric acidity pops with a champagne-like mouthfeel and bright tanginess, like homemade lemonade. It is extraordinarily floral with a daze of jasmine and honeysuckle but the real star is the stone fruit flavours that carry the cup, think warm apricot and peach snapple. The cup closes on an elusive spicy sweet note, think of the soft bite of candied ginger or a gingersnap cookie.
For espresso, use a 1:2.5 to 1:2.3 ratio in 31-35 seconds.
